How do you recognize good fresh duck liver?
The color
A good fresh duck liver has a uniform, light beige, slightly pink color. There should be no spots or discolored areas.
The texture
Smooth and slightly shiny, a good fresh duck liver should be firm to the touch yet supple. At Esprit Foie Gras, our fresh duck liver is deveined, so it's ready to cook.
The weight
A good fresh duck liver is generally considered to weigh between 400 and 500g. A liver that's too heavy is often synonymous with excessive force-feeding and therefore lower quality. Our fresh duck liver is sold in packs of two for a total weight of 950g.
Where we come from
A good fresh duck liver comes from a traditional farm. At Esprit Foie Gras, all our fresh livers come from free-range farms in the heart of the Gers. What's more, we ship fresh livers directly and only after slaughter on Mondays, so you can be sure of the freshness of our products.

Duck liver kebabs
In skewers, sweet and sour works wonders! Easy to make, fresh duck liver skewers are always a hit. You can intersperse your pieces of duck liver :

Pan-fried duck liver salad with figs and balsamic vinegar
