Duck breast, honey and apple sauce

Ingredients for 2 persons :

  • 1 nice duck breast from Gers from ESPRIT FOIE GRAS
  • 2 apples
  • 1 garlic clove
  • 1 large tablespoon honey
  • 2 tablespoons cider vinegar
  • Thyme Salt and pepper.

Preparation:

  1. Heat a frying pan and lightly slit the skin of the duck breast, then cook it skin-side down in the pan.
  2. Cover and cook for 10 minutes, then turn over and cook for a further 5 minutes or so.
  3. Set aside and wrap in aluminium foil. Reserve a little duck fat, peel the garlic and mince.
  4. Brown the garlic and thyme in the duck fat.
  5. Deglaze with a little water, honey and vinegar.
  6. Remove the cooking juices and adjust the seasoning if necessary.
  7. Peel the apples, cut into quarters and fry for a few minutes in the reserved duck fat.
  8. All that's left to do is dress and enjoy.
